Our small batch craft distillery is nestled in a small coastal village
of Blind Bight on the shores of Westernport Bay in Victoria, Australia.
We invite you to enjoy our amazing whisky, infused with a unique Australian coastal flavour profile.

We take pride in hand selecting only the finest malts and barrels from all around the world. We specialise in sourcing antique barrels that have matured fortified wines from 20 to 70 years. We then re-cooper them, readying them for our exceptional new make spirit.

Small Batch Single Barrel Special Limited Release Ex Bourbon (Jack Daniels) First Fill 5+ YO 48% ABV 700ML.
It’s a medium bodied whisky and light in colour.
Definitely getting some of the bourbon cask influence on the taste with some vanilla and caramel notes before some more Aussie notes of banana coved in cream, very subtle notes of lychee and kiwi in the background with a sprinkle of salt over it all. Those tasting notes are lite to medium level but delicious with a creamy mouthfeel.
The finish is of a medium length as well, with an interplay of the caramel and vanilla with a little salt and pepper dance on the tip of my tongue.
I should mention the nose as well as I rather enjoyed the banana, caramel, milk chocolate, vanilla and slight oakyness that it was giving me.
Final Thoughts: well first up I should say I was given a sample of this whisky before I bought the bottle. But I did buy the bottle after trying the sample so I think it is safe to say I enjoyed it. The bananas on the nose was a big highlight for me as although this is a bourbon barrel from America it wore its Aussie badge with pride with that tropical banana nose and to a lesser degree taste. The medium level of the tasting notes worked well too as it didn’t end up tasting to sweet. I would say it’s a well balanced whisky that does everything you would hope a 48% ABV whisky would. It won’t knock your socks off but it will give you a very happily smile and a hand reaching for a second dram.
